Melting Lemon And Coconut Cookies, Sugar-free, Gluten-free And So Delicious

Allergies develop when our immune system becomes sensitive and reacts excessively to substances that come into contact with the body. These allergens can include foods such as fish, citrus, or gluten. Gluten is actually a protein found mainly in wheat, barley and rye. If you are intolerant, this macromolecule can cause digestive problems and cause abdominal pain, among other inconveniences. So, to make you happy without harming your health, we offer a delicious recipe of lemon and coconut cookies, gluten free!

Although "Gluten Free" products are in vogue, this trend of gluten free often annoys people with a real intolerance and for good reason! Particularly disabling, gluten allergy disrupts the intestinal flora, leading to deficiencies or even undernutrition. Symptoms of this allergy include:
  • Irritation of the throat and mouth
  • Nasal congestion
  • Difficulty breathing
  • Skin rash
  • Irritation of the eye
  • bloating
  • Nausea and vomiting
  • Diarrhea

Although these symptoms are usually mild, they can in some cases be more serious or even fatal. It is therefore imperative to consult a doctor and establish an appropriate diagnosis as soon as the first signs appear.

How is gluten allergy diagnosed?
If gluten allergy is suspected, it is important to first make sure that it is not a more serious condition, such as celiac disease, an autoimmune condition.

You will start with a blood test, which will then be analyzed for the presence of antibodies that may indicate celiac disease or wheat allergy. When your doctor has ruled out any risk of a more serious problem, he will still not be able to confirm the presence of a gluten intolerance, because there is in fact no test on this subject. The most common method for determining this sensitivity is simply to reduce or eliminate gluten from the diet and then monitor changes in these symptoms.

What foods to avoid in case of gluten intolerance?
If you have a gluten allergy, it is necessary to avoid any food containing it including: wheat and its derivatives, barley, malt, rye and yeast. Here is a non-exhaustive list of foods and drinks containing gluten:
  • Bread and pastries
  • Pasta
  • noodles
  • Pancakes and waffles
  • biscuits
  • Some sauces and gravies
  • crackers
  • beers
  • Malt beverages

  • 115 g of coconut flour
  • ¼ cup melted coconut oil
  • 1 cup of coconut milk
  • Lemon peel or vanilla extract
  • The juice of a lemon
  • 4 tablespoons maple syrup
  • A pinch of salt
  • 1 teaspoon baking powder
  • 1 teaspoon of baking soda
  • 1 egg

Start by preheating your oven to 180 degrees then cover a baking sheet with parchment paper.

Then mix the coconut oil, coconut milk, lemon juice, lemon zest or vanilla extract, egg and maple syrup in a large bowl.

Take another bowl, then mix the previously sifted coconut flour, baking powder, baking soda and salt.

Then add your flour mixture to your first preparation by incorporating it little by little to avoid lumps. You will get a dough that you divide into little balls.

Place your dough balls in your baking sheet and flatten them with your hand or the bottom of a glass.

Bake for 12 to 15 minutes at 180 degrees until the edges of your cookies are lightly browned.

Remove your plate from the oven and place your cookies on a rack while they cool. Then store them in a tightly closed container that you will put in the refrigerator.

Your cookies are ready! Enjoy your meal !
